Little breakfast on the farm.

I was reading last night on foraging. Our rabbit Rosie always nibbles on these certain leaves when she runs around the yard so I started giving her some in the morning when I check on her. I learned that the leaves I’ve been feeding Rosie our rabbit for years are actually plantain. I don’t know if you know about the plantain weed, but it is packed full of vitamins and nutrients. No wonder she got the name “the rabbit that never dies”!! Not that we are trying to kill her, but we are not sure how old she is because we got her for free off of craigslist after we saved her from her fate of being killed because they didn’t want her. Anyway, got off on a rabbit trail (pun intended). As you can see, you can make this delicious meal from your backyard.

Here is the recipe:

A few smaller leaves of plantain

A few leaves of lambs quarters

Some fresh herbs

Chopped kale

2 eggs

1 scallion

Sauté all the ingredients together then add your eggs and scramble. Garnish with fresh strawberries. Enjoy the fruits of your labor.

This is a fun and healthy way to get your kids to eat veggies. But remember, always educate yourself on plant identification.
