Pastured Maple Sausage with Russet Potatoes


Today was a busy day. Had to run to the store with all the munchkins. Poured down raining most of the day. Helped my neighbor start her garden. And then it was 4:30. 4:30?!?!? What am I going to make for dinner? I didn’t meal plan this week so I quick threw some stuff together. So Solomon and I headed out to the garden. We found some kale. That and the onions we thinned for scallions are the only thing ready right now besides strawberries. So mix that with meat, we have ourselves a meal. Here is the recipe:

Pastured Maple Sausage with Russet Potatoes

Pastured Pork (we buy the maple links from a local farm)

3 Russet Potatoes (skins on chopped)

1/2 Onion (diced)

Avocado Oil

3 Large Kale Leaves (pulled off stem and chopped)

Raw Cheddar Cheese (grated as garnish)

Fruit of choice (garnish)

Spices of choice (I use Celtic salt and granulated garlic)

Start out by washing your potatoes and chop them. Place them in a cast iron skillet with avocado oil and spices. Cover. Add sausage to stainless steel skillet with water. Cover and simmer. Once potatoes are soft and slightly browned, add your chopped kale and onions. Cover. Cook until kale is tender and onions transparent. Take off the heat. Once sausage is cooked, plate your potatoes, add your raw cheese, your sausage and fruit. This meal is great when you get busy and lose track of time. Enjoy!
