If you want a healthy lunch in the summer than this is the one!! I eat this for lunch everyday and have yet to get tired of it. I got a salad similar to this one when we were vacationing at the beach. I came home and had to make this salad. The one I had from the beach used bacon which was delish, but I wanted chicken for more added protein. Here is the recipe I came up with.
Grilled Chicken Salad with Blue Cheese and Balsamic Glaze
Lettuce (I used some from our garden)
Blue cheese crumbles (I used one that is more intense)
Balsamic glaze (see below)
Directions: Grill your chicken. Meanwhile, wash and course chop your lettuce. Assemble on a plate. Cut up grilled chicken and place on top of lettuce. Add your blue cheese and balsamic glaze.
1 cup balsamic vinegar
1/3 cup honey
Pinch of real salt
Add all ingredients to sauce pan and simmer stirring once in a while to incorporate. Turn down to low. When the back of your spoon is coated with glaze pull off heat. Cool and drizzle on your salad. Refrigerate any leftovers.
